Fish
We source our fish from trusted suppliers who prioritise quality and responsible sourcing.
Wrights of Marino Haddock, Cod, Halibut — North Atlantic.
The Wright family opened their first fish and grocery shop in Malahide in 1904 under the name M. Wright & Sons. Today, Wrights of Marino is Ireland's leading seafood wholesaler, a family business now in its fourth generation, with a reputation built over more than a century of putting quality first. Our Haddock, Cod and Halibut come from the North Atlantic, with origins spanning Norway, Ireland, Scotland and Iceland depending on the season.
Glenmar Seabream — Mediterranean.
Established in 1987, Glenmar is an Irish sustainable fishing company and Bord Bia Exporter of the Year. MSC and ASC certified, reflecting their dedication to responsible and sustainable seafood sourcing. Our Seabream is sourced from the Mediterranean, primarily from Greece and Turkey.
Meat
Our meat is sourced from some of Ireland's most respected butchers and suppliers, with a focus on Irish provenance wherever possible.
FX Buckley Beef Cheek, Chicken, Pork Belly, Ribeye — Ireland & Poland.
Beginning with Francis Xavier Buckley's first butcher shop on Moore Street in 1930, FX Buckley has established itself as a Dublin institution, even earning mentions in James Joyce's Ulysses. The quality and traceability of their meat is of utmost importance — they travel the lengths of the country regularly to ensure their producers meet the highest standards. We source our Beef Cheek, Pork Belly and Ribeye from Ireland, and our Chicken from Poland.
McLoughlins Beef Rump, Beef Burgers — Ireland.
A trusted Irish butcher supplying us with quality Irish beef rump and burgers, made with locally sourced, traceable Irish beef.
Duck
La Rousse Foods Duck Legs & Duck Breast — France.
Founded in 1995 by a team of culinary specialists, La Rousse Foods sources and delivers exceptional, seasonal and specialty ingredients to Ireland's top chefs. An Irish-owned company specialising in fine foods for premium establishments since 1992, ISO 22000 accredited and committed to ethical sourcing and sustainability. Our duck legs and breast come from France, sourced through La Rousse's network of carefully selected European producers
Ice Cream
Scúp Gelato Artisan Gelato — Ireland.
Founded in 2014 by the Devereux family in Wexford, Scúp Gelato was built from the ground up with a focus on supplying top restaurants and hotels around Ireland. They couple the highest quality Irish milk and cream with fresh, authentic ingredients like Wexford strawberries, Sicilian Bronte pistachios and Madagascan vanilla, churned in small handmade batches to ensure care and quality in every tub. Their recipes were developed with a gelato master from Milan — the result is a product that's proudly Irish in its ingredients and Italian in its craft. Multiple award-winner at the Irish Food Awards.
